Making the dough

  1. First, grab your smaller mixing bowl and pour in the warm water, yeast, and honey. Mix the ingredients thoroughly and let it sit for 5-15 minutes until it becomes foamy.
  2. As it sits, take out the larger mixing bowl and pour in the all-purpose flour. Use your hands to push slightly to the sides, creating an area to pour the yeast.
  3. Pour in the mixture from step 1 and add the olive oil and sea salt. Use a spoon to combine the ingredients until a dough forms.
  4. Next, use your hands to scrape the flour off the sides of the bowl. Knead the dough into a small, flattened ball. Transfer to a cutting board or prep area.
  5. Next, sprinkle a little flour on the surface and knead the dough for about 5 minutes. Once you’ve made a ball out of the dough, take the large mixing bowl and grease it with olive oil.
  6. Use your hands to spread it out and place the dough on the bottom. Cover with saran wrap and let stand for an hour.
  7. Once the dough has risen, remove the baking sheet and drizzle with olive oil. Spread the dough evenly on the sheet and let it rest for 30 minutes. Cover with a kitchen towel.
  8. Now repeat this process with about half of the ingredients you used for the first batch of bread. Spread the batter into the medium-sized deep skillet and set aside.

Preparation of toppings for focaccia bread
